- Perfumes and scents: Aroma: Highly aromatic yet delicate; notable are the scents of yellow bell pepper and sage, with hints of tropical fruit, peach, and melon. Taste: Full-bodied, elegant, and velvety. Excellently structured with harmonious acidity.
- Pairings: It shines with crustaceans in general, and particularly with langoustines, whether raw or used to season pasta alla buzara. Perfect with lobster and crayfish in all variations, up to baked fish with Mediterranean aromas. Excellent with risottos made with aromatic spring herbs.
- Winemaking: Vinification: gentle pressing with separation of the different press fractions. Static decanting at 14°C (57°F) for 24-36 hours. Fermentation in stainless steel tanks at a controlled temperature of 18-20°C (64-68°F). Aging: 6-8 months in contact with the fermentation yeasts, periodically kept in suspension.
